To enjoy the peak flavor of this heirloom, harvest when the fruit is firm but has turned a deep, uniform pinkish-red. These giants often ripen from the bottom up, so check the "shoulders" near the stem. Handle with care; their heavy weight and thin skin make them prone to bruising.

The Heritage Developed in the 1930s by "Radiator Woods" in West Virginia, this variety earned its name through its sheer productivity. By cross-breeding four of the largest tomatoes he could find, Woods created a plant so popular that he sold the seedlings for $1 each—eventually earning enough to pay off his $6,000 mortgage in just a few years.
